The newest kid on the block for low-glycemic, gluten-free noodles are konjac noodles, made from the root of the konjac plant which grows in China, Japan and other eastern countries. Konjac contains glucomannan, a soluble fiber that supports healthy blood sugar levels. The noodles have no calories, are very filling, and taste similar to bean thread noodles. They are fun to serve with vegetables and any of the Sweet Spot Solution sauces.
